Our Culinary Lead/Kitchen Manager will be finishing each and every dish with detail prior to submittal to customer while ensuring each kitchen staff member is performing their job expertly. Using proper standards per printed ticket while maintaining 100% accuracy and a completely clean and sanitized environment. Final authority of quality of each and every dish. Coordination with Service Team Leader to ensure orders are fulfilled quickly and correctly. Supervision of Grill, Steam, Prep, and Clean positions.

Requirements/Responsibilities
Duties & Responsibilities:
♣ Taste each and every sauce and condiment daily prior to shift to ensure freshness and appropriate flavor.
♣ Stock topping station for shift and ensure back-ups are available throughout shift.
♣ Fulfill orders according to size, portion, and position of toppings.
♣ Maintain 100% compliant food safety standards throughout shift and ensure all culinary staff does the same.
♣ Oversight of Service Team Lead while working as a team to coordinate large orders, catering, phone orders.
♣ Monitor shift prep lists and leave prep and work lists for next shifts.
• Give orders to Grill and Steam station staff to replenish proteins, vegetables and rice as needed to ensure wait times for food are at a minimum while ensuring freshness of all product.
♣ Clean and maintain cooking utensils and dishware throughout day as you direct the dish person staff to keep up with dishware demand.
• Supervise culinary staff during downtime to ensure prep work is completed through their efforts.
♣ Interact with guests as needed to provide excellent service.
♣ Check Inventory and order ingredients and supplies as needed.
♣ Alert Owner of any workplace problems.

Qualifications:
♣ Be able to communicate and understand the predominant language(s) of our guests.
♣ Must have a basic knowledge of service procedures and functions.
♣ Must have basic knife skills.
♣ Background in food prep, restaurant management, and understanding of a profit and loss statement for this type of food service establishment.
♣ Prior management or supervisory role(s).
♣ Be able to work in a standing position for long periods of time (up to 5 hours).
♣ Be able to safely lift and easily maneuver trays of food frequently weighing up to 20 to 30 pounds.
• Be able to not smoke during shift.
