The Kitchen Team Leader serves to providing coaching and direct supervisory leadership
ensuring our recipes and procedures are followed. This individual must have a passion for quality, excellence and people. The Kitchen Team Leader reports directly to the Director of Kitchen Operations. This individual will be the driving voice of communication and operating standards in the kitchen and is responsible for quality, cleanliness, and productivity in the
kitchen. This leader must possess a humble servant attitude: treats other cashiers with kindness, honor, dignity and respect.

Experience leading teams/shifts is required for this position.
Oversee Kitchen Operations:

Manage quality and productivity

Give input on kitchen staffing and schedule

Run breaks during shifts

Ensure kitchen/Unit is opened/closed properly by giving feedback to other leaders

Manage chicken rotation and other rotational systems 

Manage chicken cool down process

Oversee Lean Prep Operations:

Manage quality and productivity

Manage Lean Prep levels and make changes/improvements as needed

Assure all food is handled and stored properly; labeled, dated, and covered

Ensure Policies and Quality/Standards Are Upheld:

Ensure restaurant adheres to Vendor check in policy

Manage holding times and timers for all food products

Temp each product, each shift (in addition to RQA)

Conduct daily RQA

Follow-up on RQA findings and track trends

Implement necessary changes as indicated by health inspection/ROE

Maintain Equipment/Kitchen Supplies:

Manage kitchen cleanliness to “Tour Ready” at all times

Cleaning schedule for kitchen areas and equipment (vent hoods, etc)

Ensure all tools are available and maintained and used to meet requirements

Small wares – Knives - Scales and measures

Ensure Profitability by Monitoring:

Food cost, paper cost, and labor cost

Influence Culture of Continuous Improvement:

Create culture of “continuous improvement” in kitchen (no shortcuts)

Receive ROE quarterly report and diagnose areas for improvement

Receive quarterly CEM report and diagnose areas for improvement

Track speed of service reports to determine areas for improvement

Implement needed changes
