Assistant Kitchen Manager literally helps the Kitchen Manger run the BOH. If the kitchen stops the restaurant flat-lines.
Assistant Kitchen manager is helps with the overall operations for the back of house and kitchen - from hiring to food purchase and stock to training and kitchen safety practices.

This is a great opportunity and has lots of room for growth in our organization.
* Creates and completes menu developments.
* Prepares completed menu descriptions.
* Prepares completed menu cost analysis.
* Line and prep departmental assignment recommendations.
* Recipe references broken down by station including proper portions.
* Inventory product special list broken down by meat, seafood, poultry, grocery (dry goods), spices, produce, cheese, dairy, bread, paper, and specialty goods.
* Kitchen schematic of equipment for proper station assignments, food layout, and efficiency.
* Training, development and testing of kitchen staff.
* Establish scheduling needs of staff.
* Establish ordering guide for all items necessary for kitchen operations.

* High School diploma, College degree preferred but not necessary
* Certified Culinary Training.
* Able to stand for 10 hours
* Available to work 50-55 hours a week
* Able to lift 50 pounds
* Good hearing for accurate communication
* Command of the English language
* Good computer skills
* Strong people skills
* Ability to teach and train others
