Utility Worker, Dishwasher

The role of the utility worker is to wash dishes, glassware, flatware, pots or pans, using dishwashers or by hand. The utility worker will also need to maintain kitchen work areas and
equipment. The utility worker will also need to receive food orders, make sure they are stored and rotated properly. The utility worker may prepare various foods for cooking or serving. The utility worker needs to maintain a high level of performance, while ensuring guest satisfaction and profitability in accordance with the company’s service and operational standards. The utility worker should follow the supervisor on duty.
Essential Functions

 Wash dishes, glassware, flatware, pots or pans, using dishwasher or by hand

 Place clean dishes, utensils, or cooking equipment in proper storage areas

 Maintain kitchen work areas, equipment, or utensils in clean and orderly condition

 Clean or prepare various foods for cooking or serving

 Stock supplies, such as food or utensils in storage areas, walk-ins or on the line

 Sweep and scrub floors, walls and ceilings

 Clean garbage cans

 Sort and remove trash, placing it in designated pickup areas

 Sort and remove linen, placing it in designated pickup areas

 Receive, store and rotate supplies and food deliveries

 Load or unload trucks that deliver or pick up food supplies

 Breakdown all kitchen equipment and clean on a weekly basis


 Excellent communication skills

 Work calmly and effectively under pressure

 Must have problem solving abilities

 Be self motivated and organized

 Able to stand or walk for entire length of shift

 Able to work long periods of time without a break

 Ability to handle multiple assignments at once

 Knowledge of kitchen equipment and utensils

 Able to lift up to 50 lbs at a time

Bad Habits

 Not properly cleaning dishes and utensil

 Leaving clean dishes in dish room

 Improperly cleaning dish machine

 Leaving trash in trash bins after shift

Good Habits

 Properly store all clean dishes and utensils constantly during shift

 Spray out trash bins after empting trash

 Break down boxes before placing into trash or for recycling

Opening Duties

 Wash all pots, pans, china, cutlery and utensils as needed

 Sanitize all shelving in dish area

 Walk in and all storage areas swept and mopped

 Restrooms swept and mopped

 Stairwell swept and mopped

 Walls in dish area wiped clean

Closing Duties

 Break down all equipment to bare minimums and detail clean on a nightly basis

 Empty all trash bins, spray out and place empty liners in the bins

 Put all clean dishes, pots, pans and utensils in proper places

 Floor mats ran through machine and placed back into kitchen

 Linen taken out and empty linen bags placed on linen racks
