An experienced Butcher with management skills will manage a unique and welcoming retail butcher counter. The Head Butcher of Belcampo Meat Co will be responsible for the day-to-day management of the butcher counter as well as the primary point of contact for the V.P. of Retail Butchery. The Butcher will be key in assuring the highest level of customer service and satisfaction as well as a great working environment for all Belcampo Meat Co employees.
- Track meat inventory and place weekly orders. Track appropriate waste through POS. Keep notes on any abnormal usage or waste of product.
- Fill/maintain/merchandise meat case based on clientele demand and day of the week.
- Oversee professional/portioned retail cutting (from sub-primals to case-ready) minimizing waste, customer service, and exhaustive understanding of cuts and animal rearing process.
- Assure quality control for meat products, including filling out weekly QC Reports: describing positives and negatives of product.
- Coordinate with Head Chef to assure maximum product (meat) usage.
- Manage and oversee in-store training of Butchers. Lead by example.
- Assure highest level of customer service, including fielding/handling customer complaints and questions as required. Holding employees to same high standards of customer service.
- Scheduling and oversight of schedule.
- Adherence to health and safety regulations; enforcement of safe in-store practices.
- Store maintenance including fix-its and cleanliness.
- Weekly check-ins with V.P. Checking and responding to emails on daily basis.
- Solving problems with help from other Managers as they arise.
- Contributes to team effort by going above and beyond duties described here.

Technology related KSAs:
- Working knowledge of Excel, Dropbox and Google Docs
- Working experience with Revel

Minimum Qualifications
- 3+ years of meat cutting and/or kitchen experience with FOH experience
- Experience or knowledge in working with whole animals
- High school diploma/GED required, Bachelors Degree recommended (relevant major encouraged)
- Food Handler’s Certificate required

Physical Requirements
- This positions requires an employee who can work standing for 10-12+ hours a day, 7 days a week
- Lift approximately 50-80 pounds
- The main location for this position is at the Larkspur Shop
- This job may require frequent travel
