This is a key management position and essential in fostering a great working environment in the kitchen and the shop at large.

Under minimal supervision, the Kitchen Manager - BOH Manager will be responsible for the quality of all fresh prepared foods at Belcampo Meat Co, including sit-down, take out, deli and grab & go. The Kitchen Manager will be responsible for executing a menu highlighting Belcampo meats, and will work with the Head Butcher in order to fully utilize our whole animals. This is a key management position and essential in fostering a great working environment in the kitchen and the shop at large.

Requirements/Responsibilities
Kitchen Manager - BOH Manager Requirements & Responsibilities

- Maintain and assure highest level of quality for all fresh prepared food products
- Execute menu developed by Culinary Director
- Propose new dishes and specials as needed
- Coordinate with Head Butcher to ensure maximum product usage and profitability
- Hire, train & manage kitchen and dish-room staff
- Manage kitchen & dish-room scheduling, in conjunction with General Manager
- Manage all kitchen purchasing and inventory
- Evaluate revenue and costs, adjusting ordering and scheduling as necessary to achieve goals set by Corporate office
- Maintain clean, organized and properly functioning kitchen, including equipment upkeep
- Ensure compliance with local health department and other regulations
- Assist in general tasks as specified by VP Culinary & General Manager

Knowledge:
- Comprehensive culinary knowledge, especially meat and understanding food and labor cost

Minimum Qualifications
- 5+ years of culinary experience
- 2+ years managing kitchens
- High school degree/GED equivalent is preferred
- Manager Food Safety certification is preferred
- Spanish proficiency preferred

Physical Requirements
- This positions requires the ability to work standing for 8+ hours a day, 5 – 7 days a week
- Schedule and hours varies from Monday - Sunday
- Lift approximately 50 pounds
